Make Blue Cheese Dressing 3 Ways

For topping your salad, steak, chop or burger: Roquefort or any blue

Here are three easy recipes, for when the bottled stuff isn't doing it for you anymore or you just want to try something different.

Did he say easy? Dead easy. Once you’ve chopped an ingredient or two, all you do is whirl it all together in your food processor or blender.

Many blue cheese varieties are quite salty, so it is especially important to taste the dressing before adding any additonal salt. You may not need to add any. And not only with this recipe, tasting is essential to any good cooking.

Basic Blue Cheese Dressing

This is the easiest of the three. It’s great on a salad of mixed greens. If you want a smoother dressing, add all the cheese at one time, but it’s really great with the intense little nuggets of blue.

  1. In a food processor or blender, process the first group of ingredients.
  2. Taste and add salt if necessary. You may not need to add any depending on how salty the blue cheese is.
  3. Str in the remaining 1/4 cup blue cheese crumbles.

Blue Cheese Dressing with Herbs

This dressing is enhanced with a hint of herbs and just a bit of a kick from the horseradish.

  1. In a food processor or blender, process the first group of ingredients.
  2. Taste and add salt if necessary.
  3. Str in the blue cheese crumbles.

Jalapeno-Blue Cheese Sauce

Calling this a sauce rather than dressing only indicates that this bad boy is a dynamite topping for steaks, chops or even a burger.

  1. In a food processor or blender, process the first group of ingredients.
  2. Taste and adjust the amount of spice. Add more jalapenos if you like it spicier, or add more sour cream if it needs taming. Add salt if necessary.
  3. Str in the blue cheese crumbles.
